several generations ago.
In old‐style tradition, the cores (or piñas of the harvested
Agave Pacifica are first roasted in stone pits lined with
mesquite wood and charcoal.

Close to the Sea of Cortez, this micro‐climate produces the seductive taste of Bacanora has
caused quite a stir since it was first introduced more than 300 years ago in what’s now known as
the state of Sonora, Mexico. Smoother than mezcal, smokier than tequila – yet just as powerful
as either – Bacanora boasts a history as complex as its flavor and wild as its spirit.



Traditional production: It's made in small batches by Sonoran artisans, following ancestral methods, including cooking the agave hearts with mesquite in hole-ovens.
Flavor profile: It offers a bold smoky profile with herbal and natural notes, and aromas of agave, caramelized mesquite smoke, vanilla, and citrus. It's described as smoother than mezcal but smokier than tequila, with a powerful and complex palate.
